Paleo (& Egg-Free) Banana Chocolate Muffins

No Grains, Legumes or Dairy?  Gluten, Soy, and Egg-Free?  What more can you ask for?

…Well, some animal protein would be nice!

Simply put, these muffins are in the treat/indulgence column – as they’re pretty well a combination of sugar (fruit) and fat (nuts), with minimal protein.  So they shouldn’t end up on your breakfast/snack rotation – like my 5-Ingredient Pancakes.

But that being said, it’s all good stuff in there, and it’s far better than traditional baked goods. So they’re not going to kill you once in a while (cheat day, special occasions, post-workout, etc)…

Wet ingredients

  • 2-3 mashed bananas (2 med/lg or 3 small/med)
  • 1/4 cup coconut milk (real deal from a can)
  • 2 tablespoons sprouted flaxseed/meal (Organic Traditions brand)
  • ¼ cup stirred almond butter (properly stirred/mixed)
  • 1 tablespoon coconut oil, melted and cooled
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 & 1/4 cup paleo flour (Bob Mills brand)
  • 1 teaspoon baking powder (Purest brand)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup dairy-free chocolate chips (Camino brand)

Instructions

  1. Mix wet ingredients and dry ingredients in separate bowls.  Can use hand beaters on wet ingredients if you like (to ensure banana mixes), but it’s not necessary.
  2. Add wet ingredients to dry ingredients, and stir until combined.  Then add chocolate chips.
  3. Refrigerate mixture for 20-30min so it hardens up a bit.
  4. Line muffin tins with parchment liners OR grease muffin tin with melted coconut oil.  Either option works well.
  5. Remove mix from fridge and start scooping it into the muffin tins.  Ideally 3/4 full.  Ice cream scooper with trigger/release HIGHLY RECOMMENDED, as the mix can be very sticky/messy.
  6. Bake at 350 degrees for 20min.
  7. Remove tray from oven, pull muffins (with liner) out of tray and let stand on a plate for 15-20min.  If not using liners, let stand for 15-20min in muffin tray, and then scoop/pop out with a spatula or flat/edged object.  Less sticky (in both cases) when properly cooled/set.

This recipe also works in other baking trays – notably the small loaf style one.  So you end up with Mini Banana Breads. If opting for this version, forget the liners and do the coconut oil pre-greasing.  And again, don’t forget the Ice Cream Scooper with Trigger/Release.
